Festive Baked Cranberry Rosemary Chicken

Ingredients

  • 1 cup fresh cranberries
  • ¼ cup brown sugar
  • 4 tbsp white wine vinegar, divide
  • 3 pieces bone-in skin on chicken thighs
  • salt and pepper
  • 1 tbsp fresh rosemary
  • ½ tsp paprika
  • ¼ cup extra virgin olive oil
  • ½ cup celery stalks, chopped
  • ½ cup pearl onion

Directions

  1. In a small bowl, combine the cranberries, brown sugar, and 2 tbsp white wine vinegar.
  2. Pat the chicken dry. Mix all other ingredients with chicken in a large bowl and set aside to marinate for 15 minutes.
  3. Preheat the oven to 425 °F in BAKE.
  4. Place the chicken mixture into a bake dish, add sugared cranberries on top.
  5. Bake in the 425 °F heated oven for 50 minutes or until the chicken is fully cooked through.
