Garlic Butter Roasted Turkey

  • 1 frozen turkey (22 lbs)
  • 2 stick unsalted butter, soften
  • 2 lemon, zested and halved
  • 2 tsp chopped fresh thyme leaves
  • 1 bunch fresh rosemary
  • 1 orange, halved
  • 1 onion, quartered
  • 1 head garlic, halved crosswise
  • salt and pepper


  1. Preheat the roaster oven to 375°F. Mix the soften butter with lemon zest, thyme leaves, salt and pepper.
  2. Take the giblets out of the turkey and wash the turkey inside and out and pat dry. Using the back end of a wooden spoon and carefully separate and loosen the skin from the breast.
  3. Stuff and spread about 2/3 of butter under the skin and spread out the rest outside of the turkey.
  4. Stuff the cavity with the bunch of rosemary, halved lemon, quartered onion, and the garlic.
  5. Roast the turkey about 4.5 hours, or thickest center portion of thigh without touching bone registers 165 degrees. Remove the turkey to a cutting board and cover with aluminum foil; let rest for 30 minutes.
  6. Slice the turkey and serve.
