Garlic Butter Roasted Turkey

- 1 frozen turkey (22 lbs)
- 2 stick unsalted butter, soften
- 2 lemon, zested and halved
- 2 tsp chopped fresh thyme leaves
- 1 bunch fresh rosemary
- 1 orange, halved
- 1 onion, quartered
- 1 head garlic, halved crosswise
- salt and pepper
Directions
- Preheat the roaster oven to 375°F. Mix the soften butter with lemon zest, thyme leaves, salt and pepper.
- Take the giblets out of the turkey and wash the turkey inside and out and pat dry. Using the back end of a wooden spoon and carefully separate and loosen the skin from the breast.
- Stuff and spread about 2/3 of butter under the skin and spread out the rest outside of the turkey.
- Stuff the cavity with the bunch of rosemary, halved lemon, quartered onion, and the garlic.
- Roast the turkey about 4.5 hours, or thickest center portion of thigh without touching bone registers 165 degrees. Remove the turkey to a cutting board and cover with aluminum foil; let rest for 30 minutes.
- Slice the turkey and serve.
