Ingredients

  • 4 cups all-purpose flour
  • 1 tsp salt
  • 1 ¾ cups water
  • 2 tsp honey
  • 1 ½ tsp active dry yeast
  • 1 ½ tbsp olive oil
  • Vegetables of your choice for topping

Directions

  1. In a large bowl, combine the warm water, honey, and yeast. Stir and let it sit for 5-10 minutes until the mixture becomes foamy. Add flour and salt to the yeast mixture, then mix until a shaggy dough forms. No kneading is needed.
  2. Drizzle 1 tbsp of olive oil on top of the dough, cover the bowl with plastic wrap or a damp cloth, and let it rise in a warm place for 2-3 hours, or until the dough doubles in size and becomes bubbly.
  3. Preheat the roaster oven to 375°F. Grease the roasting pan generously with olive oil.
  4. Once the dough has risen, carefully transfer it to the greased roaster pan. Gently stretch the dough to fill the pan, pressing it down evenly. Drizzle a little more olive oil on top, then use your fingers to make dimples all over the dough surface.
  5. Arrange the vegetables of your choice on top of the dough, pressing them slightly into the surface. Drizzle a bit more olive oil over the vegetables, and sprinkle with additional salt if desired.
  6. Place the pan in the preheated roaster oven. Bake for 25-30 minutes, or until the focaccia is golden brown on top and cooked through. Let it cool slightly before slicing and serving.
