Pork Belly Kimchi Fried Rice

Ingredients

  • 4 cups uncooked white rice (rinsed)
  • 1½ cups chopped kimchi
  • ½ cup kimchi juice (from the kimchi container)
  • 1 lb pork belly, sliced into bite-sized pieces
  • 3 tbsp soy sauce
  • 2 tbsp sesame oil
  • 4 cups water
  • 3 green onions, chopped (for garnish)
  • Crushed seaweed and sesame seeds (for garnish)

Directions

  1. Turn on STS (Sauté-Then-Simmer) mode on the ARC-5200SG. Add pork belly and sauté until lightly browned. Add kimchi and stir-fry together until fragrant.
  2. Add rinsed rice, kimchi juice, soy sauce, sesame oil, and water. Stir to combine everything evenly.
  3. Close the lid and let the STS cycle continue to cook until done.
  4. Once the cycle finishes, open the lid and mix everything well.
  5. Serve into bowls and garnish with green onions, crushed seaweed, and sesame seeds. Enjoy hot!
