Pork Belly Kimchi Fried Rice

- 4 cups uncooked white rice (rinsed)
- 1½ cups chopped kimchi
- ½ cup kimchi juice (from the kimchi container)
- 1 lb pork belly, sliced into bite-sized pieces
- 3 tbsp soy sauce
- 2 tbsp sesame oil
- 4 cups water
- 3 green onions, chopped (for garnish)
- Crushed seaweed and sesame seeds (for garnish)
Directions
- Turn on STS (Sauté-Then-Simmer) mode on the ARC-5200SG. Add pork belly and sauté until lightly browned. Add kimchi and stir-fry together until fragrant.
- Add rinsed rice, kimchi juice, soy sauce, sesame oil, and water. Stir to combine everything evenly.
- Close the lid and let the STS cycle continue to cook until done.
- Once the cycle finishes, open the lid and mix everything well.
- Serve into bowls and garnish with green onions, crushed seaweed, and sesame seeds. Enjoy hot!
