One Pot Paella in Rice Cooker

Ingredients

  • 2 tbsp olive oil
  • 4 clove garlic, mined
  • 1 shallot, diced
  • 1 red bell pepper, diced
  • 2 roma tomato, diced
  • 1⁄2 cup parsley, chopped divided
  • 2 bay leaf, crush
  • 1 tsp paprika
  • 1 pinch saffron
  • 1 tsp salt
  • 1 tsp pepper
  • 2 cup rice
  • 21⁄2 cup chicken broth
  • 1⁄2 lb shrimp
  • 1⁄2 lb mussels
  • 1 lb clam
  • lemon, for garnish

Directions

  1. Preheat olive oil with Sauté-Then-Simmer® STS function. Stir in garlic and shallot, sauté for 5 minutes.
  2. Add bell pepper, tomato and parsley stem, mix well.
  3. Add bay leaf, paprika, saffron, salt, pepper and rice. Stir and cook for 5 minutes.
  4. Add chicken broth. Taste and add salt if needed.
  5. Close the lid, let it cook until the 10 minutes count down.
  6. Open the lid, mix the parsley leaves into the rice. nestle the shrimp, mussels and clam.
  7. Close the lid, let the cycle finished and KEEP WARM for another 10 minutes.
  8. Garnish with fresh lemon. Serve.
