Roasted Chicken with Acorn Squash & Chorizo

Ingredients

  • 8 bone-in, skin-on chicken thighs
  • 1 large acorn squash, sliced into 1-inch slices (skin on)
  • 1 ½ cups chorizo, sliced
  • 1 onion, sliced
  • 4 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • 1 ½ tsp salt
  • 1 tsp black pepper
  • ½ tsp chili flakes (optional)
  • 1 cup chicken broth

Directions

  1. Preheat the Aroma Roaster Oven to 375°F – the light will turn off when the roaster oven reaches the set temperature.
  2. In a large bowl, toss chicken thighs with olive oil, smoked paprika, cumin, salt, black pepper, and chili flakes (optional). Rub the seasoning evenly over the chicken.
  3. Arrange the acorn squash slices, chorizo, onion, and garlic at the bottom of the roaster oven. Pour the chicken broth over the vegetables.
  4. Place the seasoned chicken thighs on top of the acorn squash and chorizo mixture, skin side up.
  5. Cover the roaster oven and roast for 50-60 minutes, or until the chicken is fully cooked (internal temperature reaches 165°F).
  6. Serve and enjoy the delicious combination of tender chicken, roasted acorn squash, and chorizo!
