Ingredients

  • 2 cups rice, rinsed
  • 3 cups water
  • 4 boneless, skinless chicken thighs
  • Salt and pepper, to taste
  • 2 cups green beans, trimmed
  • 2 cups butternut squash, cubed

Directions

  1. In a bowl, season the chicken thighs with salt and pepper on both sides.
  2. Add the rinsed rice and 3 cups of water to the rice cooker. Place the seasoned chicken thighs on top of the rice.
  3. Start the rice cooker using the “White Rice” function.
  4. After 15 minutes of cooking, open the lid and carefully place the green beans and butternut squash sliced on the steam tray. Position the steam tray above the chicken and rice.
  5. Close the lid and allow the rice cooker to finish the cooking cycle. Once complete, carefully remove the steam tray and fluff the rice. Serve the chicken, rice, and steamed vegetables together as a complete meal. Enjoy!
