Roaster Oven Stuffed Artichokes

Ingredients

  • 6 large artichokes
  • 1 ½ cups breadcrumbs
  • ¾ cup grated Parmesan cheese
  • 4 cloves garlic, minced
  • ⅓ cup fresh parsley, chopped
  • 1 tsp salt
  • 1 tsp black pepper
  • ¾ cup olive oil (plus extra for drizzling)
  • 1 lemon, cut into wedges
  • 3 cups vegetable or chicken broth

Directions

  1. Trim the artichokes by cutting off the stems so they can sit flat. Use a spoon to carefully scoop out the core and the fuzzy choke from the center of each artichoke, creating a cavity for the filling.
  2. In a medium bowl, mix together breadcrumbs, Parmesan cheese, minced garlic, chopped parsley, salt, and pepper. Add ¾ cup olive oil and mix until the mixture is moistened and crumbly.
  3. Spoon the breadcrumb mixture into the spaces between the artichoke leaves and in the core cavity, pressing gently to ensure the stuffing stays in place.
  4. Pour the broth into the bottom of the roaster oven. Arrange the stuffed artichokes in the roaster oven, sitting them upright. Drizzle a little more olive oil over the top of each artichoke.
  5. Cover the roaster oven and cook at 375°F for 45-60 minutes, or until the artichokes are tender (a leaf should pull away easily).
  6. Squeeze fresh lemon juice over each artichoke and serve warm. Enjoy the delicious, tender artichokes with savory stuffing!
