White Chicken Chili

Ingredients

  • ½ yellow onion, chopped
  • 2 cloves garlic, mined
  • 1 tsp olive oil
  • 1 piece boneless skinless chicken breast
  • 1 16oz. salsa verde
  • 2 can 15oz.  cannellini beans
  • ½ can 15oz. pinto beans
  • 2 cup chicken broth
  • 2 tsp ground cumin
  • ½ tsp dried oregano
  • ¼ tsp cayenne pepper
  • salt and pepper

Directions

  1. Preheat your rice cooker using Sauté-then-Simmer STS and heat 1 tsp olive oil. Add garlic and onion and sauté until brown. 
  2. Add all other ingredients and close the lid. Set the rice cooker go to simmer mode. 
  3. When the cooking cycle has ended, add salt and pepper to taste. 
  4. Pour into bowls and serve hot!
