Wild Rice and Peach Burrata Salad

Ingredients

  • 1/2 cup wild rice
  • 1 1/2 cup water
  • 1/2 tsp salt
  • 1 ripe peach, sliced
  • 1/2 cup cucumber, sliced
  • 1/4 cup red onion, thinly sliced
  • 1 cup arugula
  • 1 cup spinach
  • 1 ball Burrata cheese
  • 1 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • Salt and pepper to taste

Directions

  1. Cook wild rice in the rice cooker.
  2. Cool the cooked wild rice to room temperature.
  3. Add sliced peaches, arugula, spinach, onion, and cucumber. Toss gently.
  4. Tear Burrata cheese and place on top.
  5. Drizzle with olive oil and balsamic vinegar. Season with salt and pepper.
  6. Serve immediately and enjoy!
