Air Fryer Crispy Rice Salad

Ingredients

  • 1 cup cooked jasmine rice, chilled
  • 1 tbsp vegetable oil
  • 1 cup mixed salad greens
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup cucumber, diced
  • 1 avocado, diced
  • 2 tbsp olive oil
  • 1 tbsp taco seasoning
  • Salt and pepper to taste

Directions

  1. In a bowl, mix (leftover or chilled) jasmine rice with vegetable oil until evenly coated.
  2. Spread the rice in a single layer in the Aroma Glass Air Fryer basket.
  3. Air fry (at 375ºF) for 15 minutes, shaking the basket halfway through, until the rice is golden brown and crispy.
  4. In a large bowl, combine mixed salad greens, cherry tomatoes, cucumber, avocado. Add the crispy rice to the salad mixture.
  5. Season with olive oil, taco seasoning, salt, and pepper and toss to combine.
