Broccoli Cheddar Soup

Ingredients

  • 5 tbsp butter
  • 1/2 yellow onion, chopped
  • 2 carrots, peeled and chopped small
  • 1 stalk celery, thinly sliced
  • 1/4 cup flour
  • 2 cups milk
  • 2 cups vegetable stock
  • 1 1/2 cups coarsely chopped broccoli florets
  • 2 1/2 cups sharp cheddar cheese, shredded
  • Salt and pepper, to taste

Directions

  1. Set your multicooker to Sauté-Then-Simmer STS® mode and let it heat briefly with the lid closed.
  2. Add 1 tablespoon of butter to the inner pot and let it melt. Once melted, add onion, carrots, and celery.
  3. Cook, stirring frequently, for about 7 minutes until they are soft.
  4. Add the remaining butter and flour. Stir constantly to melt the butter and coat vegetables with flour.
  5. Continue stirring and cooking the flour for about 4 minutes until it slightly browns.
  6. Gradually pour in milk and then vegetable stock while stirring well to combine.
  7. Let the soup simmer for 30 minutes. If your cooker switches to Keep Warm, reset it to STS.
  8. Add chopped broccoli florets, stir well, and cook for another 10 minutes until broccoli is tender.
  9. Switch the cooker to Keep Warm. Stir in the cheese until fully melted and incorporated.
  10. Season with salt and pepper according to taste, then serve.

*TIP: This soup is PERFECT for a bread bowl.
