Baked Blueberry Oatmeal
- 2 cups old-fashioned oats
- 1/4 cup almond flour
- 1 tsp baking powder
- 1/4 tsp baking soda
- 1/2 tsp salt
- 1/4 cup sugar
- 2 tbsp butter, melted
- 2 cups milk
- 1/4 cup blueberry yogurt
- 2 eggs
- 2 cups blueberries
In a large bowl, combine oats, almond flour, baking powder, baking soda, salt, and sugar. Set aside.
In a separate bowl, whisk together the blueberry yogurt, eggs, melted butter, and milk until smooth.
Gradually add the wet mixture to the dry ingredients, stirring until well combined.
Gently fold in the blueberries.
Pour the mixture into a cooking pan.
Set the air fryer to HIGH and cook for 25 minutes.
Once done, allow the oats to cool for 15 minutes.
Serve warm, drizzled with maple syrup and a dollop of whipped cream if desired.
