BBQ Pulled Pork

Ingredients

  • 2-2.5 lbs boneless pork loin

  • ½ yellow onion, sliced

  • 2 cloves garlic, minced

  • 1 tbsp black pepper

  • 1 tbsp salt

  • 2 tbsp cayenne, or less to your liking

  • 2 tbsp chili powder, or less to your liking

  • 8 oz your favorite bottled BBQ sauce, plus more for serving

  • ½ cup water


Directions

  1. Open the lid of the multicooker and place the pork loin into the inner pot.

  2. Add in the sliced yellow onion, minced garlic, black pepper, salt, cayenne pepper, chili powder, BBQ sauce, and water to the inner pot then close the lid securely.

  3. Press the Start button to turn on the cooker then press Slow Cook twice to select Medium heat. To set the amount of slow cook time, press the (+) button until the digital display reads 6 hours. Once set, press Start. The cooker will beep and the display will stop flashing to indicate the beginning of the cooking cycle.

  4. While cooking, the digital display will count down in 1 minute increments from the set time of 6 hours. Allow to cook until the timer has reached 0.

  5. When finished, the multicooker will beep and automatically switch to Keep Warm mode.

  6. Open the lid to check if the pork is done by using two forks and pulling them in opposite directions. If the pork shreds easily and no pink remains, it is completely cooked. If the pork is still rough and/or pink, use the Slow Cook function on Medium heat again for an additional 4 hours, checking on the pork about every 2 hours.

  7. After shredding, stir the pulled meat in the sauce be sure to coat evenly.

  8. To serve, use tongs and place the pulled pork inside slider buns with extra BBQ sauce on the side if desired.
