CAJUN SHRIMP & GREEN BEAN QUINOA BOWL

Ingredients

  • 1⁄2 lb shrimp, peeled and deveined
  • 1⁄2 lb green beans, trimmed and snapped in half
  • 1⁄2 cup carrot, sliced
  • 1 tsp olive oil
  • 1 tsp garlic powder
  • 2 tsp Cajun seasoning
  • 1 cup uncooked quinoa
  • 1 1⁄4 cups water

Directions

  1. In a large bowl, combine the peeled and deveined shrimp, trimmed and snapped green beans, and sliced carrots. Drizzle the olive oil over the mixture and sprinkle with garlic powder and Cajun seasoning. Toss well to coat everything evenly with the seasonings.
  2. Place the uncooked quinoa and water into the rice cooker.
  3. Set the rice cooker to the WHITE RICE setting and start the cooking cycle.
  4. After 15 minutes of cooking, carefully open the lid and place the seasoned shrimp, carrots, and green beans in the steam tray above the quinoa.
  5. Close the lid to continue the cooking cycle and allow the shrimp, carrots, and green beans to steam while the quinoa finishes cooking.
  6. Once the cooking cycle is complete, carefully remove the steam tray with the shrimp and vegetables.
  7. Fluff the cooked quinoa with a fork and then combine it with the cooked shrimp, green beans, and carrots.
  8. Serve the flavorful shrimp and vegetable quinoa mixture warm as a delicious and nutritious meal. Enjoy!
