Cauliflower Cakes

  • 16 oz frozen cauliflower rice

  • 2 egg

  • 3 tbsp green onion, more for garnish

  • ½ cup cheddar cheese

  • ½ cup bread crumbs

  • ½ tsp salt

  • ½ tsp garlic powder

  • sour cream for garnish

  • olive oil


  1. Defrost cauliflower rice, be sure to squeeze out all moisture. Place into a large bowl.

  2. Stir in cheese, eggs, green onion, bread crumbs, salt and garlic powder. Adjust seasonings to taste.

  3. Coat the grill pan with olive oil and preheat on High.

  4. Form the cauliflower mixture into patties, cook until golden brown and set, about 4 minutes each side. Remove from heat.

  5. Serve pancakes topped with sour cream and more green onion, if desired.
