Chicken Barley Soup

Ingredients

  • 1 tbsp olive oil
  • 2 cups chopped onion
  • 1 minced garlic clove
  • 1 cup chopped carrots
  • 1 cup chopped potatoes
  • 1 cup chopped zucchini
  • 1 (14.5 oz) can diced tomatoes
  • 1/3 cup pearl barley
  • Chopped roasted skinless chicken (from half a chicken)
  • 2 bay leaves
  • 1/2 tsp thyme
  • 5 cups water

Directions

  1. Heat 1 tbsp olive oil in the multicooker’s inner pot.
  2. Add 2 cups chopped onion and 1 minced garlic clove. Cook for 5 minutes using the “Soup” function.
  3. Add 1 cup chopped carrots, 1 cup chopped potatoes, 1 cup chopped zucchini, diced tomatoes, 1/3 cup pearl barley, chopped chicken, bay leaves, and 1/2 tsp thyme.
  4. Close the lid and let the “Soup” cycle continue.
  5. Once done, stir the soup and serve.
