Grilled Citrus Chicken with Spicy Basil Chimichurri

Ingredients

Citrus Chicken

  • 1/2 cup orange juice
  • 2 tsp orange zest
  • 2 tbsp lemon juice
  • 1 tsp lemon zest
  • 2 tbsp lime juice
  • 1/2 tsp lime zest
  • 3 cloves garlic, minced
  • 1 tbsp fresh rosemary
  • 2 tbsp olive oil
  • 2 tsp dijon mustard
  • 2 tsp honey
  • 2 tsp salt
  • 1/2 tsp black pepper
  • 4 boneless skinless chicken breasts

Chimichurri

  • 3 cup fresh basil leaves, chopped
  • 1 cup Italian parsley leaves, chopped
  • 2 tbsp onion, chopped
  • 3 cloves garlic, chopped
  • 1 tbsp crushed red pepper
  • 2 tbsp lemon juice
  • 1 cup olive oil
  • 1 tsp salt

Directions

  1. In a mixing bowl whisk together all chicken ingredients except chicken until well combined
  2. Place chicken in the bowl, marinade in refrigerator and let rest for 2 hours
  3. Combine all the ingredients for the chimichurri in a mixing bowl, sit aside for at least 1 hour
  4. Preheat the grill over medium-high heat. Remove chicken from marinade and cook on grill for 15 minutes flip halfway or until center reach 165°F
  5. Let chicken rest 5 minutes, serving with chimichurri
