Holiday Pot Roast

Ingredients

  • ⅓ cup kosher salt

  • 3 tbsp dry mustard

  • 4 tsp coarsely ground black pepper

  • 1 ½ tsp garlic powder

  • 1 tbsp onion powder

  • 2 tsp dried thyme

  • 2 tsp dried oregano

  • 2 tsp cumin

  • 2 tsp celery seeds

  • 1 tbsp olive oil

  • 1 (4-6 lbs) beef rib roast

  • 6 oz small potatoes

  • 2 cups baby carrot sticks

  • 4 cups beef broth


Directions

  1. Blot the roast with paper towels to get rid of some moisture. Mix all of the dry spices and then rub onto the roast, making sure to evenly coat the entire piece of meat.

  2. Place the roast in your pressure cooker along with the beef broth, carrots and potatoes. Lock the lid into place and press the “Meat” function on your pressure cooker.

  3. Cook for approximately 35 to 40 minutes.

  4. Unlock the lid, do a pressure release and allow the meat to rest for 15 minutes before serving, or baste it with additional sauce and brown the meat on the grill.
