Honey-Glazed Balsamic Carrots

  • 2 lbs. rainbow carrots, peeled

  • 1 tbsp olive oil

  • 1/4 tsp salt

  • 1/4 tsp pepper

  • 2 tbsp honey

  • 1/4 cup balsamic vinegar

  • 1 tbsp butter, melted


  1. Place the peeled carrots into the cooking pan then drizzle with 1 tbsp olive oil. Season with salt and pepper.

  2. Set on HIGH for 20 minutes.

  3. Meanwhile, in a small bowl, mix together the honey, balsamic vinegar, and melted butter.

  4. Once 20 minutes have elapsed on the carrots, pour the balsamic mixture into the cooking pan and mix until all pieces are well coated.

  5. Set on HIGH for an additional 10 minutes.

  6. Season with more salt and pepper if desired and serve.
