How to Prepare Authentic Sushi Rice

Ingredients

  • 3 cups raw Japanese short-grain rice

  • 3 cups water

  • 1 piece dried kelp

  • 1/3 cup rice vinegar

  • 3 tbsp sugar

  • 1 1/2 tsp sea salt


Directions

  1. Rinse the rice until the water is clear then drain completely.

  2. Gently wipe the dried kelp to rid of the excess white powdery substance. NOTE: It is not necessary to rid of all the powder, this will contribute to umami flavor.

  3. Add the rice and water into the rice cooker then place the dried kelp on top.

  4. Select the White Rice function.

  5. While the rice is cooking, combine rice vinegar, sugar, and salt in a small saucepan and bring it to a boil over medium-high heat. Whisk until the sugar is completely dissolved then set aside and allow it to cool.

  6. When the rice is cooked, transfer all the rice into a large glass bowl.

  7. Pour the vinegar mixture over top the rice and mix thoroughly.

  8. Cover the rice with a paper towel and allow it to come to room temperature then eat the rice by itself or roll into your favorite sushi rolls!
