One-Pot Curry Chickpea Quinoa Salad

Ingredients

  • 1 cup rinsed quinoa
  • 1 1/2 cup vegetable broth
  • 1 can chickpea
  • 1/4 cup dried cranberries
  • 1 green bell pepper, seeds removed and diced
  • 1 cup shedder carrot
  • 1/2 cup thinly sliced green onion
  • 1/4 cup tahini
  • 2 tbsp lemon juice
  • 1 tbsp madras curry powder
  • 1 tbsp maple syrup
  • salt and pepper, to taste

Directions

  1. Add quinoa and vegetable broth to a rice cooker and press WHITE RICE function.
  2. While the rice cooker is running, mix in the tahini, curry powder, lemon, and maple syrup in a large bowl.
  3. Add cooked quinoa and vegetables to the bowl. Mix well and enjoy!
