One-Pot Tuscan Orzo (Rice Cooker)

Ingredients
- 2 tbsp butter
- 1/2 medium onion, chopped
- 4 cloves garlic, minced
- 1/4 tsp Italian seasoning
- 1/4 cup sun-dried tomatoes
- 1 cup uncooked orzo pasta
- 2 cup chicken broth
- 1 cup heavy cream
- 1/2 cup freshly grated Parmesan cheese
- 2 cups packed fresh baby spinach
- Fresh basil, for garnish
- Salt and pepper, to taste
Directions
- Sauté: In rice cooker on Sauté-then-Simmer, heat oil and melt butter (oil mixture). Sauté onion and garlic until fragrant.
- Season: Stir in Italian seasoning and sun-dried tomatoes.
- Add Orzo: Add orzo, coat in oil mixture. Pour in broth and cream. Season with salt and pepper.
- Cook: Close lid, cook until done.
- Finish: Fold in spinach until wilted. Garnish with Parmesan. Enjoy!
