Rice Cooker Couscous
- 2 cups couscous
- 2 cups low-sodium chicken (or veggie) broth
- 2 tbsp olive oil
- Add couscous, olive oil, and broth to the inner pot of your rice cooker.
- Give the ingredients a quick stir, then close the lid and press the White Rice button. The timer will count down the final 10 minutes of cook time. When finished, the rice cooker will beep and automatically switch to Keep Warm.
- Give the couscous a quick stir, then transfer to a bowl, and enjoy.
Note: We love adding canned corn, grilled chicken breast (or sliced veggie patty), tomato, avocado, purple cabbage, black beans, chickpeas, and fresh parsley to our couscous!
