Rice Cooker Taco Soup

Ingredients

  • 2 tsp olive oil
  • 1 lb ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 (14.5 oz) can diced tomatoes with green chiles
  • 1 (8 oz) can tomato sauce
  • 1 (14.5 oz) can kettle corn, drained
  • 1 (14.5 oz) can black beans, drained
  • 1 tbsp chili powder
  • 1 tsp ground cumin
  • 1 tsp ground paprika
  • 1/4 tsp dried oregano
  • 32 oz beef broth
  • Shredded Mexican blend cheese
  • chopped green or red onions
  • diced avocados
  • corn tortilla strips/chips

Directions

  1. Preheat rice cooker with Sauté-then-Simmer (STS) mode.
  2. Heat oil until shimmering, then sauté ground beef until fully cooked.
  3. Stir in garlic and onion, and sauté for 5 minutes until aromatic.
  4. Add all ingredients. Mix well.
  5. Cook until it boils, stirring occasionally.
  6. Serve warm finished with desired toppings.
