Ingredients

Grits:

  • 1/2 cup uncooked old-fashioned grits
  • 1 1/3 cups chicken broth
  • 1 cup milk
  • 2 tbsp butter
  • Salt and pepper, to taste
  • 1/3 cup cheddar cheese

Shrimp:

  • 8 slices bacon, chopped
  • 1 lb. medium peeled shrimp
  • 3 garlic cloves, minced
  • 1 tsp Cajun seasoning
  • 4 green onions, chopped

Directions

  1. In the inner pot of your Aroma® rice cooker, combine uncooked grits, chicken broth, milk, butter, salt, and pepper. Mix well.
  2. Press the cook switch down to start heating the mixture.
  3. Cover and cook for 15-17 minutes, or until the grits are thickened, stirring occasionally.
  4. Stir in the cheddar cheese and heat until melted. Once melted, manually switch the cooker to Warm mode.
  5. Preheat the Aroma® Grillet® on medium heat. Once heated, add the chopped bacon to the grill pan and cook until crisp.
  6. Remove the cooked bacon and set it aside. Reserve 4 tsp of the bacon oil in the grill pan.
  7. In the same grill pan, add the shrimp, minced garlic, and Cajun seasoning. Sauté until the shrimp turns pink and is cooked through.
  8. To serve, spoon the cooked grits into serving bowls, top with the cooked shrimp, and sprinkle with chopped green onions and the reserved bacon.
