Teriyaki Zucchini Noodles

Ingredients

  • 3 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 2 tablespoons teriyaki sauce
  • 2 tablespoons olive oil
  • 1 pound fresh or frozen zucchini noodles
  • ½ sweet yellow onion, chopped small
  • salt & pepper, to taste
  • fresh cilantro, chopped to garnish
  • sesame seeds, to garnish

Directions

  1. Set your Aroma multicooker for Sauté-then-Simmer® STS and let heat with the lid on for about 5 minutes.
  2. While the cooker is heating, in a bowl combine the garlic, soy sauce, teriyaki sauce, and oil. Whisk it well with a fork.
  3. Open the lid and add the zucchini noodles. Cook while stirring frequently using a long-handled wooden or heat safe spoon until just cooked but still crunchy, about 2 minutes. NOTE: If you are using frozen zucchini noodles, cook for about 5 minutes until all separated and cooked. There will likely be leftover water in the pot with the zucchini noodles. Turn the cooker off, use an oven mitt to lift the inner pot from the cooker, and carefully drain the excess water. Replace the inner pot to the multicooker and again set for STS.
  4. Add the diced onion and cook briefly until they begin to soften and turn translucent, about 2 minutes.
  5. Season with salt and pepper to taste, then add the sauce.
  6. Stir all to combine with a long-handled wooden or heat safe spoon. Cook for an additional 2-5 minutes until the flavors are all incorporated.
  7. Turn the cooker off. Scoop out into bowls and serve immediately with fresh cilantro and sesame seeds.
