Vegan Vodka Burst Rigatoni

Ingredients

  • 3 cup rigatoni pasta, cooked
  • 1 tbsp olive oil
  • 2 tbsp garlic
  • 2 tbsp shallots
  • 2 tbsp red pepper flakes
  • 1 cup coconut cream
  • 1 tbsp vodka
  • 1/2 cup vegan parmesan cheese
  • 2 tsp salt
  • garnish basil

Directions

  1. Preheat rice cooker with Sauté-then-Simmer (STS) mode.
  2. Heat oil until shimmering, then stir garlic and shallot, and sauté for 5 minutes until aromatic. Stir in red pepper flakes for 1 more minute.
  3. Add coconut cream, vodka, and salt simmer for 10 minutes.
  4. Add the rigatoni into the inner pot and toss to combine.
  5. Grate in vegan parmesan cheese with fresh basil to serve.
