- 1 ½ cups rice flour
- ½ cup cake flour
- 1 ½ tsp baking powder
- ½ tsp baking soda
- 1 cup brown sugar
- 1 tbsp molasses
- ½ cup hot water
- 1 ½ cups cold water
- ½ cup longan
- ½ cup walnut
Directions
- Whisk together rice flour, cake flour, baking powder, and baking soda. Sift the dry ingredients twice to ensure they are well combined and free of lumps.
- In a large bowl, melt the brown sugar and molasses using hot water. Add the cold water to cool down the mixture.
- Gradually add the dry flour mixture into the sugar-water mixture, stirring well to create a smooth batter.
- Pour the batter into the inner pot of your rice cooker. Sprinkle the longan and walnut evenly over the batter.
- Place the inner pot into the rice cooker and select the Cake function to begin cooking.
- Once the cooking cycle is complete, allow the cake to cool down before removing it from the inner pot.
- Slice the cake and serve it chilled. Enjoy!
