Walnut Longan Cake

  • 1 ½ cups rice flour
  • ½ cup cake flour
  • 1 ½ tsp baking powder
  • ½ tsp baking soda
  • 1 cup brown sugar
  • 1 tbsp molasses
  • ½ cup hot water
  • 1 ½ cups cold water
  • ½ cup longan
  • ½ cup walnut


  1. Whisk together rice flour, cake flour, baking powder, and baking soda. Sift the dry ingredients twice to ensure they are well combined and free of lumps.
  2. In a large bowl, melt the brown sugar and molasses using hot water. Add the cold water to cool down the mixture.
  3. Gradually add the dry flour mixture into the sugar-water mixture, stirring well to create a smooth batter.
  4. Pour the batter into the inner pot of your rice cooker. Sprinkle the longan and walnut evenly over the batter.
  5. Place the inner pot into the rice cooker and select the Cake function to begin cooking.
  6. Once the cooking cycle is complete, allow the cake to cool down before removing it from the inner pot.
  7. Slice the cake and serve it chilled. Enjoy!
