Walnut Longan Cake

  • 1 ½ cups of rice flour
  • ½ cup cake flour
  • 1 ½ tsp. baking powder
  • ½ tsp. baking soda
  • 1 cup brown sugar
  • 1 tbsp. molasses
  • ½ cup hot water
  • 1 ½ cup cold water
  • ½ cup longan
  • ½ cup walnut


  1. Whisk rice flour, cake flour, baking powder, baking soda and sift them twice.

  2. In a big bowl, melt brown sugar and molasses with hot water and add cold water to cool it down.

  3. Add all flour mixtures into sugar water, and mix well to smooth.

  4. Pour mixture into the inner pot, and sprinkle walnut and longan.

  5. Put your inner pot into the rice cooker and cook it with Cake function

  6. When the cooking cycle completes, remove the cake from the inner pot after it cools down.

  7. Slice it and sever cool!
