  • 8 cup apple cider
  • 1/4 cup honey
  • 1 lemon
  • 2 tbsp whole cloves
  • 1 cup cranberries
  • 1 cinnamon sticks
  • 1 star anise
  • 5 rosemary sprigs
  • rum for cocktails
  • sparkling water for cocktails

  1. Pour apple cider into the inner pot. Stir in honey.
  2. With a toothpick, poke holes in the lemon, about 1/3 inch apart. Insert cloves, pointy end down, into the holes.
  3. Add the lemon, cranberries, cinnamon stick, star anise, and rosemary to the cider. Push the rosemary down to ensure it’s submerged.
  4. Close the lid and set Slow Cook for 2 hours. Once cranberries burst, carefully use a fork or masher to gently crush the remaining cranberries.
  5. Strain the mixture through a fine-mesh sieve into a large bowl. Discard remaining solids.
  6. Fill a double old-fashioned glass with ice. Add cider and rum. Stir well and top with sparkling water.
  7. Serve garnished with a rosemary sprig, lemon slice, and/or fresh cranberries, if desired.
