Avocado & Hummus Quesadillas
Ingredients

8 whole wheat fajita-size tortillas
-
8 oz. roasted red pepper hummus
-
2 tsp cumin
-
2 tbsp cilantro, minced
-
1 avocado, each half cut into 12 slices

8 oz. queso fresco
Directions

Take one of the tortillas and spread about 2 tablespoons of hummus over the whole thing, keeping a little bit of space on the edges.

Sprinkle some cumin and cilantro over the hummus.

On one half of the tortilla, place three slices of avocado. You want the slices to be thin; trust me, in this case, more is not always better!

Sprinkle about 2 tablespoons of queso fresco over the avocado. Fold the tortilla in half so it is a half-circle.

Place the quesadilla into the cooking pan of the air fryer so the straight edge is in the middle.

Repeat steps 1-4 to make another quesadilla, then place in the air fryer with the other so their two straight edges are facing each other.

Close the lid. Set the air fryer to MED and the timer to 6 minutes. After the timer goes off, carefully flip the quesadillas over and cook for another 6 minutes. Remove from the air fryer.

Repeat making and cooking the tortillas until all of the ingredients are gone and the quesadillas are cooked.
