Gingerbread Cake

  • 1 large egg
  • 1 cup molasses
  • 2 ½ cups cake flour
  • 1 ½ tsp baking soda
  • ½ cup sugar
  • ½ cup butter
  • 1 tsp ground cinnamon
  • 1 tsp ground ginger
  • ½ tsp ground cloves
  • ½ tsp salt
  • 1 cup hot water


  1. Using a hand mixer, beat the butter on high speed until smooth and creamy. As the butter reaches a soft consistency, mix in sugar.
  2. Using medium-high speed, beat in the egg and molasses until well mixed.
  3. In a separate mixing bowl, sift together all of the dry ingredients. then mix into the wet ingredients.
  4. Stir in hot water.
  5. Pour the batter into the inner pot then select the Cake function on your cooker.
  6. Once the cycle has completed, place a toothpick into the middle of the cake. If the toothpick comes out clean, remove the inner pot from the rice cooker and allow the cake to cool.
  7. Once cooled, serve on its own or top with a frosting of your choice!
