- 1/2 cup butter, softened
- 1/2 cup sugar
- 1 egg
- 1/2 cup molasses
- 2 cups all-purpose flour
- 1 1/2 teaspoons ground ginger
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground cloves
- 1/2 teaspoon salt
- 1 teaspoon baking soda
- 1 cup hot water
Directions
- Use a hand mixer to beat the softened butter until smooth and creamy. Mix in the sugar until well combined.
- Beat in the egg and molasses on medium-high speed until the mixture is smooth and well mixed.
- In a separate mixing bowl, sift together the flour, ginger, cinnamon, cloves, salt, and baking soda.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Stir in the hot water until the batter is smooth.
- Pour the batter into the inner pot of the rice cooker.
- Select the Cake function on your rice cooker.
- Once the cycle is complete, insert a toothpick into the center of the cake. If it comes out clean, the cake is done.
- Carefully remove the inner pot from the rice cooker and allow the cake to cool.
- Once cooled, serve the cake on its own or top it with frosting of your choice.
