Gingerbread Cake

Ingredients

  • 1/2 cup butter, softened
  • 1/2 cup sugar
  • 1 egg
  • 1/2 cup molasses
  • 2 cups all-purpose flour
  • 1 1/2 teaspoons ground ginger
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground cloves
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 1 cup hot water

Directions

  1. Use a hand mixer to beat the softened butter until smooth and creamy. Mix in the sugar until well combined.
  2. Beat in the egg and molasses on medium-high speed until the mixture is smooth and well mixed.
  3. In a separate mixing bowl, sift together the flour, ginger, cinnamon, cloves, salt, and baking soda.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Stir in the hot water until the batter is smooth.
  6. Pour the batter into the inner pot of the rice cooker.
  7. Select the Cake function on your rice cooker.
  8. Once the cycle is complete, insert a toothpick into the center of the cake. If it comes out clean, the cake is done.
  9. Carefully remove the inner pot from the rice cooker and allow the cake to cool.
  10. Once cooled, serve the cake on its own or top it with frosting of your choice.
