Greek Yogurt Cake

Ingredients

  • 1 cup plain Greek yogurt

  • 3 large eggs

  • 1/2 cup vegetable oil

  • 3/4 cup sugar

  • 1 1/2 cup all-purpose flour

  • 1 1/2 tsp baking powder


Directions

  1. Bring the eggs and Greek yogurt to room temperature. We recommend taking them out of the refrigerator 2 hours before beginning to bake.

  2. In a medium bowl, lightly beat the eggs. Add oil, sugar, flour, baking powder, and yogurt and beat until smooth.

  3. Grease the inner pot with nonstick cooking spray then pour the cake batter in. Select the White Rice function on your cooker to begin baking.

  4. Allow the cycle to complete then let the cake remain in the cooker for an additional 30 minutes on Keep Warm mode. Poke a toothpick through the middle of the cake to make sure the cake is fully cooked. If the toothpick can be removed cleanly, remove the inner pot from the cooker.

  5. Remove the cake from the inner pot once it’s cooled then frost with your choice of frosting if desired!
