Rice Cooker Cupcakes

  • 1 large egg

  • 1 tbsp vegetable oil

  • 1 tbsp maple syrup

  • 3 tbsp plain yogurt

  • 1½ tbsp sugar

  • ½ cup all-purpose flour

  • 1 tsp baking powder

  • 1 tsp milk powder

  • whipped cream or frosting, for topping


  1. In a medium sized bowl, whisk together the egg, vegetable oil, maple syrup and yogurt. Once incorporated, add in the sugar and mix thoroughly.

  2. Sift the flour, milk powder and baking powder together to make sure there are no clumps, then add into the egg mixture. Fold until the mixture becomes a thick batter consistency.

  3. Pour the batter evenly into four cupcake liners then place each cupcake into the steam tray. Lower the steam tray into the inner pot of your rice cooker.

  4. Select the Steam function and let the cupcakes bake for about 15 minutes or until you can insert a toothpick into the center and have it come out clean.

  5. Remove the cupcakes from the steam tray and let them cool completely before frosting them.

  6. Once cooled, top with whipped cream or any frosting of your choice and serve!
