Thai Mango Sticky Rice
2 cups sweet rice
3 cups unsweetened coconut milk
1/2 cup sugar
1/4 tsp salt
4 yellow mangoes, peeled, pitted, thinly sliced
Cook 2 cups of sweet rice with 2 cups of coconut milk in the rice cooker using the White Rice function.
When the cycle is done open the lid and stir in sugar. Note: Mix in the sugar while the rice is hot so that the sugar will properly melt.
To serve, mold 1/4 servings of sticky rice on dessert plates. Drizzle desserts with coconut milk then divide mango slices among plates.
